Robert Rodriquez demonstrates to cook puerco pibil. This is the slow cooked pork dish Johnny Depp’s character eats in “Once Upon a Time in Mexico”. The DVD includes a 10 minute bonus cut of Rodriguez teaching how to make puerco pibil in his own kitchen.

My kids and I loved the movie and we started making it using chicken or turkey. We had to track down annatto seeds and regretted not taking the spice store up on their offer to grind them for us. Hard little suckers! Instead of banana leaves we cook it in a covered dish or pan. The house smells great!

Puerco Pibil (with chicken)
  5 tblspn annatto seeds
  2 tsp cumin seed
  1 tblspn whole black pepper
  8 whole allspice
  1/2 tsp cloves
  grind all of the spices in a coffee grind
  2 fresh habanero peppers, chopped (handle with care!)
  1/2 cup orange juice
  1/2 cup white vinegar
  2 tblspn salt
  8 cloves garlic
  blend everything above
  juice of 5 lemons
  splash of tequilla

  5 lbs chicken (or turkey)

Slow roast in a covered dish or pan for 4 hours at 325°
